Pale gold with pretty pink highlights, brilliant, subtle, fresh and intense nose with a hint of spice. Beautiful rim of effervescence, fine bubbles. Fresh, tangy palate with pink grapefruit and a hint of kumquat, enveloping, straightforward, complex, finishing with a lovely crispness and a slightly salty, milky note. Good length.
Fleshy oysters with a nutty flavor, cheese such as Manigodine or summer sheep's milk Tomme that is fragrant but not too dry, poultry in sauce, and artichoke compote.
